- Preparamos el huitlacoche con ajo y cebolla cortados en cuadros pequeños , aparte cocemos el chorizo y cuando este bien cocido se lo agregamos a la mezcla anterior del huitlacoche.
- Pasamos las tortillas por aceite y freímos sin llegar a tostar; ponemos estas tortillas como base en un escofier o un refractario y agregamos una capa del relleno de huitlacoche, encima ponemos una capa de queso cheddar, otra de huitlacoche y una de queso manchego, y otra capa de tortillas. Repetimos la operación cuantas veces se pueda hasta llegar a la parte superior del molde.
- Extendemos la paste hojaldre con un rodillo y ponemos una capa de hojaldre encima, barnizamos con huevo y horneamos hasta dorar la capa superior.
- Montamos en un plato y bañamos la mitad de crema y la mitad de salsa verde(moliendo todos los ingredientes) * Decoramos con epazote en shifonade.
