  2. Separa yemas de claras, las claras en un bowl mediano, sal pimienta y bate a velocidad media alta hasta que comiencen a endurecer y alzar picos. Agrega la maizena en forma de lluvia y sigue batiendo hasta endurecer. En este punto agrega las yemas incorporando suavemente en movimientos envolventes con ayuda de un tenedor.
  3. Así debe quedar de firme el batido con yemas y sin bajarse.
  4. Ahora salpimenta por los dos lados las rebanadas de chayotes, empaniza con harina por ambos lados. Sumerge en la mezcla de huevo. Cuidando que quede bien cubierto.
